Realising that there was only one thing I loved, my teachers at school arranged for me to go to La Avalasse Catering College one year ahead of my time because of my enthusiasm. Subsequently I came top of the College for three consecutive years and left with full catering Honours. My first position in England was at the Great Foster Hotel in Surrey, where I first met Christiana, my future wife, who is also a chef. I spent two years there and eventually moved to the Hyde Park Hotel in London, where I became Chef de Partie in the Sauce Department at the age of 19. After one year at the Hyde Park Hotel, Christiana and I married and wanted to move to the countryside. It was only when I found a position at the Cavendish Hotel in Baslow as Second Chef that our ambitions were realised, and I stayed there for eight years. Christiana found a position at Max Fischer’s Restaurant in Bakewell and stayed there whilst I was at the Cavendish Hotel. During this time I served in the French Army for one year as Private Chef to Colonel Perollaz. After a while we decided to start our own business, and on 21st September 1994, Renaissance Restaurant was opened in Bakewell.
